National Fresh Fruit & Vegetable Month Recipe: Salad Greens with Peach Vinaigrette

June is National Fresh Fruit and Vegetable month! Celebrate it with a fresh salad filled with both! Try this fresh Kale salad with homemade peach vinaigrette. 

Salad Greens with Peach Vinaigrette

Salad

  • 2 bunches kale, stems removed or Spring Mix
  • 1/2 red onion, diced
  • 1 ripe peach, pitted and chopped
  • 1/3 cup crumbled goat cheese

Peach Vinaigrette

  • 1 ripe peach, pitted and chopped
  • 2 tablespoons white wine vinegar
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons water
  • 1 tablespoon honey (optional)

To prepare the dressing, combine the chopped peach, vinegar, oil, water, honey (if using), in a blender or food processor, and blend until completely smooth. If the peach you’re using is very sweet, you may not need the honey at all.

Combine salad greens, with vinaigrette dressing, toss with onion, goat cheese and peach.
